For chocolate chip lovers, there is nothing better than a warm, chewy, chocolate chip cookie. I’m a sucker for them and enjoy sinking my teeth into a good one.
The problem for me is that the Starbucks Chocolate Chip Cookies that I sometimes get are $1.60 and pack 390 calories. Ouch!!!
So, my lovely wife Alisa went to the kitchen to make a healthy, yummy chocolate chip cookie that meets our needs. This is that special recipe for gluten-free cookies that you’ll love!
These chocolate chip cookies are so good that I’ve had them for breakfast. ; )
Here’s the how-to for making Gluten-Free Chocolate Chip Cookies
All the ingredients you will need.
Pour 2 Cups of Almond Meal into a large mixing bowl…
Add 1/2 Cup of Flaxseed Meal…
1/2 teaspoon baking soda…
1/2 teaspoon coarse kosher salt…
Mix the dry ingredients together.
Pour 1/2 Cup of maple syrup into medium mixing bowl…
Pour 1/2 Cup of melted Spectrum Organic Virgin Coconut Oil…
Pour 1 Tablespoon of vanilla extract…
Mix the liquid ingredients together.
Pour the mixed liquid ingredients into the mixed dry ingredients bowl and stir.
Add 1 Cup of Enjoy Life Semi-Sweet Chocolate Chips.
Mix everything together.
Chill in refrigerator for 15-20 minutes.
Scoop rounded teaspoon of chocolate chip mix onto baking sheet lined with parchment paper.
Bake at 350 degrees for 12 minutes.
Enjoy your Gluten-Free Chocolate Chip Cookies!
2 Cups almond meal
1/2 Cup flaxseed meal
1/2 teaspoon of baking soda

1 Tablespoon vanilla extract
1 Cup chocolate chips
1. Combine dry ingredients in large mixing bowl.
2. Combine liquid ingredients in medium mixing bowl.
3. Pour liquid ingredients into dry ingredients mixing bowl.
4. Preheat over to 350 degrees.
5. Chill mixture in refrigerator for 15-20 minutes.
6. Scoop rounded teaspoons of mixture onto baking baking sheet lines with parchment paper.
7. Bake for 12 minutes.
8. Allow to cool.
9. Enjoy!
